Make this rich, savory French Onion Butter Rice for a comforting side dish that tastes like classic French onion soup in rice form. It is easy to prepare and perfect for weeknight dinners or holiday gatherings.

  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice, uncooked
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 3/4 cups beef broth
  • 1/2 cup (1 stick) unsalted butter, cut into small pieces
  • 1/2 cup shredded Gruyère or Swiss cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat the olive oil in a large, oven-safe skillet over medium heat. Add the sliced onion and cook slowly, stirring often, for 15 to 20 minutes until the onions are deeply caramelized and sweet.
  3. Stir in the dried thyme, salt, and pepper with the onions. Cook for 1 minute more until fragrant.
  4. Add the uncooked rice to the skillet and stir for 1 minute to toast the grains lightly.
  5. Pour in the condensed French onion soup and the beef broth. Stir everything together well.
  6. Dot the top of the rice mixture evenly with the pieces of butter. Do not stir the butter in.
  7. Cover the skillet tightly with a lid or aluminum foil. Transfer the skillet to the preheated oven and bake for 35 minutes.
  8. Remove the dish from the oven. Remove the cover and fluff the rice gently with a fork. If using cheese, sprinkle the Gruyère or Swiss cheese over the top.
  9. Return the dish to the oven, uncovered, for 5 to 10 minutes, or until the cheese is melted and bubbly and the rice is tender.
