French Onion Beef Stew with Cheesy Bread

A cozy winter stew with caramelized onions, tender beef, and a Gruyère-topped bread lid, perfect for cold weather meals.

Ingredients

  • 2 lbs beef chuck, cubed
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tbsp flour
  • 4 cups beef broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 French baguette, sliced
  • 1 cup Gruyère cheese, shredded

Instructions

  1. Heat butter and olive oil in a Dutch oven. Add onions and cook until caramelized.
  2. Add beef cubes and brown on all sides.
  3. Stir in garlic, flour, thyme, and bay leaf. Cook for 1 minute.
  4. Pour in beef broth and bring to a simmer. Cover and cook for 2 hours.
  5. Preheat oven to 375°F. Place baguette slices on top of the stew, sprinkle with Gruyère, and bake until cheese melts.

Notes

  • Make ahead: Stew can be refrigerated for up to 3 days.
  • Serve with mashed potatoes for extra comfort.
