Make-ahead breakfast burritos packed with sausage, eggs, and cheese for a protein-rich start to your day. Easy to freeze and reheat.

Ingredients

  • 8 large eggs
  • 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 8 large flour tortillas
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Cook sausage until browned.
  2. Add diced peppers and onions. Sauté until soft.
  3. Whisk eggs in a bowl, then pour into the pan. Scramble until fully cooked.
  4. Lay out tortillas and evenly distribute the filling. Top with cheese.
  5. Fold the sides of the tortilla inward, then roll tightly.
  6. Wrap each burrito in foil or parchment paper. Freeze for up to 3 months.
  7. To reheat, microwave for 2-3 minutes or bake at 350°F for 15 minutes.

Notes

  • Use whole wheat tortillas for extra fiber.
  • Add hot sauce or salsa for extra flavor.
  • Customize with spinach, mushrooms, or black beans.
