Fluffy, tomato-infused Spanish rice with perfect liquid ratios for tacos, bowls, or meal prep.

Ingredients

  • 1 cup long-grain white rice
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1.5 cups chicken or vegetable broth
  • 1/2 cup tomato sauce
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Rinse rice under cold water until water runs clear. Drain well.
  2. Heat oil in a skillet over medium heat. Add rice and toast for 5 minutes, stirring often.
  3. Add onion and garlic. Cook for 2 minutes until softened.
  4. Pour in broth and tomato sauce. Stir in cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Remove from heat. Let stand covered for 5 minutes before fluffing with a fork.
