Make tall, airy pancakes for weekend brunch using pantry staples. Follow these mixing tips to prevent overworking the batter and achieve an Insta-worthy stack.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
  2. In another bowl, mix milk, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients. Stir until just mixed (small lumps are fine).
  4. Heat a non-stick pan over medium heat. Pour 1/4 cup batter per pancake.
  5. Cook until bubbles form on top, then flip and cook until golden brown.

Notes

  • Let the batter rest for 5 minutes before cooking for fluffier pancakes.
  • Use a measuring cup for even-sized pancakes.
  • Serve with maple syrup and fresh berries.
