Make these easy taco pinwheels for your next gathering. They are simple, flavor-packed tortilla roll ups using cream cheese and taco seasoning, perfect as a make-ahead appetizer or quick lunch idea.

  • 1 (8 ounce) package cream cheese, softened
  • 1 packet (1 ounce) taco seasoning
  • 1 cup shredded Mexican blend cheese
  • 1 cup cooked ground beef or turkey (or black beans for vegetarian)
  • 1/4 cup finely chopped green onion
  • 1/4 cup salsa (optional, drained)
  • 4 large flour tortillas (burrito size)

Instructions

  1. In a medium bowl, combine the softened cream cheese and taco seasoning. Mix until fully blended.
  2. Stir in the shredded cheese, cooked meat (or beans), and green onion into the cream cheese mixture. If using, mix in the drained salsa.
  3. Lay one large flour tortilla flat on a clean surface. Spread about one-fourth of the filling mixture evenly over the entire surface of the tortilla, leaving a small border around the edges.
  4. Tightly roll the tortilla into a log shape. Wrap the log tightly in plastic wrap.
  5. Repeat with the remaining tortillas and filling.
  6. Refrigerate the wrapped logs for at least 2 hours, or up to 24 hours, to allow them to firm up. This chilling step is key for clean slicing.
  7. When ready to serve, remove the plastic wrap and slice each log into 1/2-inch thick pinwheels.
  8. Arrange the cheesy roll ups on a platter and serve immediately. These are great game day food!

Notes

  • For a make-ahead appetizer, wrap the logs tightly and store them in the refrigerator for up to one day before slicing.
  • If you prefer a spicier bite-sized Mexican food, add a dash of hot sauce to the filling mixture.
