Make this easy sushi bake recipe that captures all the flavors of a California roll and salmon sushi in a warm, creamy casserole. It is a perfect crowd-pleaser for potlucks or weeknight dinners.

  • 3 cups cooked and seasoned sushi rice
  • 1 cup imitation crab meat, shredded
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup Sriracha (adjust for spice level)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 pound cooked salmon, flaked
  • 1/4 cup furikake seasoning
  • 2 tablespoons unagi sauce (eel sauce)
  • Optional: Nori sheets for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked sushi rice with the rice vinegar and sesame oil. Press the seasoned rice evenly into the bottom of the prepared baking dish to form the base layer.
  3. In a separate bowl, mix the softened cream cheese, mayonnaise, Sriracha, and shredded imitation crab until fully combined. This is your creamy crab layer.
  4. Spread the creamy crab mixture evenly over the rice layer.
  5. Gently flake the cooked salmon and distribute it over the cream cheese layer.
  6. In a small bowl, mix any remaining Sriracha and mayonnaise to create a spicy mayo drizzle. Drizzle this mixture over the salmon layer.
  7. Sprinkle the entire top surface generously with furikake seasoning.
  8. Bake for 15 to 20 minutes, or until the topping is hot and slightly golden brown around the edges.
  9. Remove from the oven and drizzle with unagi sauce. Let it cool for 5 minutes before serving.
  10. Serve warm by scooping portions onto plates, often accompanied by torn nori sheets for wrapping.

Notes

  • For the best flavor, use freshly cooked sushi rice that has been seasoned with rice vinegar, sugar, and salt.
  • If you want a richer flavor, substitute half of the imitation crab with cooked shrimp.
  • You can find furikake and unagi sauce in most Asian grocery stores or the international aisle of large supermarkets.
  • This dish is excellent for parties; you can assemble it ahead of time and bake it just before serving.
