  • 3 cups powdered sugar

  • 24 tablespoons milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10 inch jelly roll pan or half sheet pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. Press the cookie dough evenly into the prepared baking pan.
  7. Bake for 18 to 22 minutes, or until the edges are lightly golden brown and the center is set. You want these bars to stay soft.
  8. Let the bars cool completely in the pan on a wire rack. This step is crucial before frosting.
  9. To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, beating until smooth.
  10. Mix in the vanilla extract and 2 tablespoons of milk or cream. Add more liquid, one teaspoon at a time, until you reach a smooth, spreadable consistency.
  11. Spread the vanilla buttercream frosting evenly over the cooled cookie bars.
  12. Decorate immediately with sprinkles, if using.
  13. Once the frosting is set, use the parchment paper overhang to lift the bars from the pan. Cut into 24 squares.

  • For the chewiest bars, avoid overbaking. Check them at 18 minutes.
  • You can substitute the vanilla extract in the frosting with almond extract for a different flavor profile.
