Make this incredibly easy stovetop chicken and gravy for a delicious, hearty comfort food dinner that comes together fast. You get juicy chicken smothered in rich, homemade savory gravy, perfect over mashed potatoes.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

Instructions

  1. Season the chicken pieces evenly with salt and pepper.
  2. In a large skillet over medium-high heat, add the olive oil. Sear the chicken for 4 to 5 minutes per side until golden brown. Remove the chicken and set it aside on a plate.
  3. Reduce the heat to medium. Sprinkle the flour into the skillet, stirring constantly for one minute to cook out the raw flour taste. This creates your roux base.
  4. Slowly whisk in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer, whisking until the gravy thickens slightly.
  5. Stir in the heavy cream, dried thyme, and garlic powder. Continue to simmer for 2 minutes until the gravy is creamy.
  6. Return the browned chicken to the skillet. Reduce the heat to low, cover the skillet, and let the chicken simmer gently in the gravy for 10 to 15 minutes, or until the chicken is cooked through and juicy (internal temperature reaches 165°F).
  7. Serve this homestyle chicken dinner immediately over fluffy mashed potatoes for the best comfort food experience.

Notes

  • For extra Southern-style flavor, use half chicken broth and half buttermilk in the gravy mixture.
  • If you prefer shredded chicken and gravy, remove the cooked chicken, shred it using two forks, and return it to the gravy to coat completely before serving.
  • This recipe is budget friendly and pairs wonderfully with biscuits or rice.
