Ingredients
Scale
1 pre-made 9-inch pie crust (or use your favorite homemade crust)
1 cup (2 sticks) unsalted butter
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon vanilla extract
4 large eggs
1 cup semi-sweet chocolate chips
1/2 cup heavy cream (for serving)
Vanilla ice cream (for serving)
Instructions
Preheat your oven to 350°F (175°C). Place your pie crust on a baking sheet.
In a medium saucepan over medium heat, melt the butter.
Remove the pan from the heat. Whisk in the sugar, cocoa powder, and salt until smooth.
Stir in the vanilla extract.
Beat the eggs lightly in a separate bowl, then gradually whisk them into the chocolate mixture until fully combined. Do not overmix.
Pour the batter into the unbaked pie crust. Sprinkle the chocolate chips evenly over the top of the batter.
Bake for 30 to 35 minutes. The edges should look set, but the center will still be soft and gooey, like a brownie.
Let the pie cool on a wire rack for at least 20 minutes before slicing. This allows the center to set slightly.
To serve, warm individual slices slightly in the microwave if desired. Top each slice with a drizzle of heavy cream and a scoop of vanilla ice cream.
Notes
For a richer flavor, substitute 1/2 cup of the sugar with packed light brown sugar.
