Ingredients

Scale
  • 1 pound broccolini, ends trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Place the trimmed broccolini on the prepared baking sheet.
  3. Drizzle the broccolini with olive oil. Add the minced garlic, salt, and pepper. Toss everything together until the broccolini is evenly coated. Spread the broccolini into a single layer.
  4. Roast for 12 to 15 minutes, or until the florets are slightly crispy and the stems are tender-crisp.
  5. Remove the baking sheet from the oven. Immediately sprinkle the grated Parmesan cheese over the hot broccolini.
  6. If using, drizzle with fresh lemon juice. Serve this easy broccolini recipe right away.

Notes

  • For crispier broccolini, you can increase the roasting time by a few minutes, watching closely to prevent burning.
  • If you do not have Parmesan, this recipe works well with just garlic and olive oil for a paleo friendly vegetable option.
