Easy slow cooker chicken nachos with minimal prep, perfect for a budget-friendly family dinner or game day.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 bag (12 oz) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/2 cup sliced jalapeños

Instructions

  1. Place chicken, diced tomatoes, taco seasoning, and chicken broth in the crockpot.
  2. Cook on low for 6 hours or high for 3 hours.
  3. Shred chicken with two forks.
  4. Preheat oven to 375°F.
  5. Spread tortilla chips on a baking sheet.
  6. Top with shredded chicken and cheese.
  7. Bake for 10 minutes or until cheese melts.
  8. Garnish with red onion, cilantro, sour cream, and jalapeños.
