Crockpot Buffalo Chicken Dip

This easy crockpot buffalo chicken dip is perfect for game day or any gathering. It’s cheesy, spicy, and incredibly simple to make.

Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup crumbled blue cheese (optional)

Instructions

  1. Combine shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and 1 cup of cheddar cheese in a 4-quart slow cooker.
  2. Stir until well combined.
  3. Cover and cook on low for 1.5 to 2 hours, or until heated through and bubbly, stirring occasionally.
  4. Stir in the remaining 1/2 cup of cheddar cheese and crumbled blue cheese (if using).
  5. Cover and cook for another 15-30 minutes, or until the cheese is melted and the dip is hot.
  6. Serve warm with tortilla chips, celery sticks, or crackers.

Notes

  • For a lighter version, substitute Greek yogurt for half of the cream cheese.
  • Keep the dip warm on the ‘warm’ setting of your slow cooker for parties.
  • This dip can be made ahead and reheated in the crockpot or microwave.
