Easy 3-Ingredient Cranberry Brie Bites

Whip up these incredibly simple yet elegant Cranberry Brie Bites. Using just three main ingredients, these flaky, gooey appetizers are perfect for holiday parties or any gathering where you need a crowd-pleasing finger food fast.

  • 1 package (14.1 ounces) puff pastry, thawed
  • 1 (8 ounce) wheel of brie cheese, rind removed and cut into small cubes
  • 1/2 cup cranberry sauce (whole berry or jellied)
  • Optional: Toasted pecans or a drizzle of honey for topping

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Lightly grease a mini muffin tin.
  2. Unfold the thawed puff pastry sheets onto a lightly floured surface. Use a 2.5-inch round cookie cutter to cut out circles from the pastry. You should get about 12 to 16 circles.
  3. Gently press each pastry circle into the cups of the mini muffin tin, forming a small cup shape.
  4. Place one small cube of brie cheese into the center of each pastry cup.
  5. Top the brie with about 1/2 teaspoon of cranberry sauce. If using, sprinkle a few chopped pecans over the top.
  6. Bake for 12 to 15 minutes, or until the puff pastry is golden brown and puffed, and the brie cheese is melted and gooey.
  7. Carefully remove the brie bites from the muffin tin using a small offset spatula or butter knife. Let them cool slightly on a wire rack before serving.
  8. If desired, drizzle with honey just before serving.

Notes

  • For an even quicker appetizer, you can use pre-made phyllo shells instead of cutting puff pastry.
  • If you prefer a savory-sweet combination, try fig jam instead of cranberry sauce for a different flavor profile.
