2 large eggs, separated (yolks and whites)

Instructions
Place the chopped dark chocolate in a heatproof bowl set over a saucepan of simmering water (a double boiler). Heat gently, stirring occasionally, until the chocolate is completely melted and smooth. Remove from heat and let it cool slightly for about 5 minutes.
In a separate bowl, beat the cold heavy whipping cream with an electric mixer until stiff peaks form. Set aside.
In a medium bowl, whisk the egg yolks with the sugar until the mixture is pale yellow and slightly thickened. Whisk the slightly cooled melted chocolate into the egg yolk mixture until fully combined. Stir in the vanilla extract.
In a clean, grease-free bowl, beat the egg whites until stiff, glossy peaks form. You want firm peaks that hold their shape.
Gently fold one-third of the whipped cream into the chocolate mixture to lighten it. Then, gently fold in the remaining whipped cream until just combined. Do not overmix.
Carefully fold in the stiff egg whites in two additions, working gently to keep the mixture airy. Stop folding just when no white streaks remain. This step creates the light, fluffy texture.
Divide the chocolate mousse among 4 to 6 small serving glasses or ramekins.
Cover the dishes and chill in the refrigerator for at least 3 hours, or until firm. Serve cold.

For an extra decadent treat, garnish your finished mousse with fresh raspberries or chocolate shavings before serving.
If you are worried about using raw egg whites, you can substitute them with 1 cup of stabilized whipped cream folded in at the end for a richer, but slightly denser, mousse.
