Easy Chicken and Rice Soup

A cozy, quick chicken and rice soup using pantry staples or leftover chicken for weeknight comfort.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup white rice, uncooked
  • 6 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes.
  2. Add garlic and thyme. Cook for 1 minute.
  3. Pour in chicken broth and add bay leaf. Bring to a boil.
  4. Stir in rice and reduce heat to simmer. Cook for 15 minutes.
  5. Add shredded chicken and cook for 5 more minutes.
  6. Remove bay leaf. Season with salt and pepper.

Notes

  • Use rotisserie chicken for extra flavor.
  • Freeze leftovers in airtight containers for up to 3 months.
  • Swap white rice for brown rice or quinoa for a healthier option.
