- 2 cups cooked chicken, shredded
- 1 cup white rice, uncooked
- 6 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Heat a large pot over medium heat. Add onion, carrots, and celery. Cook for 5 minutes.
- Add garlic and thyme. Cook for 1 minute.
- Pour in chicken broth and add bay leaf. Bring to a boil.
- Stir in rice and reduce heat to simmer. Cook for 15 minutes.
- Add shredded chicken and cook for 5 more minutes.
- Remove bay leaf. Season with salt and pepper.
Notes
- Use rotisserie chicken for extra flavor.
- Freeze leftovers in airtight containers for up to 3 months.
- Swap white rice for brown rice or quinoa for a healthier option.
