A quick and elegant skillet chicken dish with savory mushroom-Marsala wine sauce, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme

Instructions

  1. Season chicken with salt and pepper, then dredge in flour.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Cook chicken until golden brown, about 5 minutes per side. Remove and set aside.
  4. In the same skillet, sauté mushrooms until softened.
  5. Add garlic and thyme, cook for 1 minute.
  6. Pour in Marsala wine and chicken broth, scraping browned bits from the pan.
  7. Simmer until sauce reduces slightly, about 3 minutes.
  8. Stir in heavy cream.
  9. Return chicken to the skillet and simmer for 5 minutes.

Notes

  • Use dry Marsala wine for best flavor.
  • Serve with mashed potatoes or pasta.
  • For gluten-free, substitute flour with almond flour.
