  • 4 ounces Boursin cheese (or other herbed soft cheese)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon dried Italian seasoning

  • 1/4 teaspoon black pepper
  • 2 cups cherry or Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon sugar
  • 1/4 cup balsamic glaze, for drizzling
  • Baguette slices, crackers, or pita chips, for serving

Instructions

  1. In a medium bowl, combine the softened cream cheese, Boursin cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until completely smooth and creamy.
  2. Spread the cheese mixture evenly into the bottom of a shallow serving dish. This forms your creamy base layer.
  3. In a separate small bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, olive oil, and sugar. Toss gently to coat the tomatoes. Let this mixture sit for at least 10 minutes to marinate.
  4. Spoon the marinated tomato mixture evenly over the cheese layer.
  5. Drizzle the balsamic glaze over the top of the tomatoes just before serving.
  6. Serve this crowd pleasing dip immediately with toasted baguette slices, crackers, or pita chips.

Notes

  • For a make ahead dip, prepare the cheese layer and the tomato topping separately. Store them covered in the refrigerator for up to 24 hours. Assemble and drizzle with glaze just before serving.
  • If you prefer a hot bruschetta dip, you can bake the cheese layer at 350 degrees Fahrenheit for 15 minutes until warm, then top with the fresh tomato mixture.
