1 cup milk (whole milk recommended)
1/2 cup lager or pale ale beer
8 ounces sharp cheddar cheese, shredded
4 ounces cream cheese, softened
4 ounces Gruyère cheese, shredded
1/4 teaspoon salt
1/8 teaspoon black pepper
Pinch of cayenne pepper (optional)
Instructions
Melt the butter in a medium saucepan over medium heat.
Whisk in the flour to create a roux. Cook for one minute, stirring constantly.
Gradually whisk in the milk until the mixture is smooth and begins to thicken slightly.
Slowly pour in the beer while whisking continuously. Bring the mixture to a gentle simmer.
Reduce the heat to low. Add the shredded cheddar, cream cheese, and Gruyère, stirring until all the cheese is completely melted and the dip is smooth. Do not let it boil.
Stir in the salt, pepper, and cayenne pepper, if using.
Taste and adjust seasoning as needed.
Serve the warm cheese dip immediately with soft pretzels or your favorite dippers.
Notes
For the best texture, shred your own cheese instead of using pre-shredded varieties.
Use a beer you enjoy drinking; the flavor will come through in the dip. A lager or pale ale works well.
