Ingredients
Scale
1 tablespoon butter
1/4 cup all-purpose flour
1 cup lager beer (non-alcoholic beer works too)
1 cup milk
8 ounces sharp cheddar cheese, shredded
4 ounces Monterey Jack cheese, shredded
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
Pinch of salt and black pepper
Instructions
Melt the butter in a medium saucepan over medium heat.
Whisk in the flour to create a roux. Cook for one minute, stirring constantly.
Slowly pour in the beer while whisking continuously to prevent lumps. Cook until the mixture thickens slightly, about 3 minutes.
Whisk in the milk until the sauce is smooth. Bring the mixture to a gentle simmer.
Reduce the heat to low. Add the shredded sharp cheddar cheese and Monterey Jack cheese one handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the sauce boil.
Stir in the Dijon mustard, garlic powder, salt, and pepper.
Continue to cook on low heat until the dip reaches your desired thickness. This is your best beer cheese dip, ready for dipping!
Serve warm with soft pretzels, tortilla chips, or vegetable sticks.
Notes
For a non-grainy texture, shred your own cheese instead of using pre-shredded varieties, which contain anti-caking agents.
If you prefer a non-alcoholic beer cheese dip, substitute the lager with an equal amount of non-alcoholic beer or chicken broth.
This dip is fantastic as a savory cheese dip for parties or as a tailgating dip idea.
