Make these simple, delicious baked apple fritter bites packed with fresh apples and warm cinnamon. Finish them with a tangy apple cider glaze for a perfect cozy treat.

  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and finely diced
  • Vegetable oil spray (for greasing)
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons apple cider
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk the granulated sugar, egg, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Spray the tops lightly with vegetable oil spray.
  8. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean. Let the fritter bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the fritters cool, prepare the glaze: Whisk together the powdered sugar, apple cider, and vanilla extract until smooth. Add more cider, one teaspoon at a time, if the glaze is too thick.
  10. Once the fritter bites are cool, drizzle the cinnamon glaze generously over the tops. Allow the glaze to set before serving.

Notes

  • For a crispier exterior, you can lightly brush the tops of the fritters with melted butter before baking.
