Instructions

  1. In a large bowl, mix the flour, salt, and yeast together.
  2. Add the lukewarm water to the dry ingredients. Mix with a wooden spoon until just combined into a shaggy dough. Do not knead.
  3. Cover the bowl tightly with plastic wrap and let it rest at room temperature for 12 to 18 hours. This long fermentation develops the flavor.
  4. After the long rise, gently scrape the dough onto a lightly floured surface.
  5. In a small bowl, mix the grated Parmesan cheese and minced garlic with the olive oil.
  6. Gently stretch the dough into a rough rectangle. Spread the Parmesan garlic mixture evenly over the dough. Fold the dough over itself several times to create a rough ball, incorporating the filling.
  7. Place the dough ball seam-side up in a lightly floured bowl or proofing basket, cover, and let it rest for 30 minutes.
  8. About 30 minutes before baking, place your Dutch oven (with the lid on) into your oven and preheat to 450°F (232°C).
  9. Carefully remove the hot Dutch oven from the oven. Gently turn the dough out into the hot pot.
  10. Cover the Dutch oven and bake for 30 minutes.
  11. Remove the lid and continue baking for another 15 to 20 minutes, or until the crust is deep golden brown.
  12. Carefully remove the bread from the Dutch oven and let it cool completely on a wire rack before slicing.
