  • 1 teaspoon baking soda

  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups peeled, cored, and finely chopped fresh apples (about 2 medium apples)
  • 1/2 cup cinnamon-sugar swirl mixture (1/4 cup sugar + 1 tablespoon cinnamon)
  • Optional Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This step helps create that moist texture.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredient mixture and the milk to the wet ingredients, beginning and ending with the dry mixture. Mix only until just combined; do not overmix the batter.
  6. Gently fold in the chopped fresh apples.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar swirl mixture evenly over the batter. Top with the remaining batter.
  8. Use a knife or skewer to gently swirl the cinnamon mixture through the batter a few times to create ribbons of flavor.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top browns too quickly, loosely tent it with foil.
  10. Let the apple bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely.
  11. If using the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled bread before slicing.
