Ingredients

Scale
  • 2 large Russet potatoes, cut into fries
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 6 slices bacon, cooked and crumbled
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper to taste
  • Vegetable oil, for frying (or cooking spray for air fryer/oven)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup Monterey Jack cheese
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 green onions, sliced, for garnish

Instructions

  1. Prepare the fries: Soak the cut potatoes in cold water for 30 minutes. Drain and pat them completely dry. If deep frying, heat oil to 350°F (175°C). If baking or air frying, preheat your appliance. Toss fries lightly with oil, salt, and pepper. Cook until golden brown and crisp. Set aside.
  2. Season the chicken: In a shallow dish, mix the flour, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Dredge the chicken pieces in the seasoned flour, shaking off excess.
  3. Cook the chicken: In a skillet over medium-high heat, cook the floured chicken until golden brown and cooked through, about 5-7 minutes. Set the cooked chicken aside.
  4. Make the cheese sauce: In a small saucepan, melt the butter over medium heat. Whisk in the cornstarch slurry and cook for one minute until slightly thickened. Gradually whisk in the milk until smooth. Add the cheddar and Monterey Jack cheeses, stirring constantly until the sauce is smooth and melted. Do not boil.
  5. Assemble the loaded fries: Place the crispy french fries on a large serving platter or individual plates. Top the fries evenly with the cooked chicken pieces and crumbled bacon.
  6. Smother the dish: Pour the warm cheese sauce generously over the chicken, bacon, and fries.
  7. Garnish and serve: Sprinkle with sliced green onions immediately. Serve your ultimate loaded fries while hot.

Notes

  • For extra flavor, toss the cooked chicken in a tablespoon of your favorite barbecue sauce before assembling.
  • If you prefer a spicier dirty fry experience, add a dash of hot sauce to your cheese sauce.
  • You can use frozen french fries to save time when making this hearty potato recipe.
