A comforting, protein-packed chili made with chicken and white beans, perfect for busy weeknights.

  • 2 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced

Instructions

  1. Place chicken, beans, green chiles, onion, garlic, and broth in the crockpot.
  2. Add cumin, oregano, chili powder, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Shred the chicken with two forks.
  5. Stir in cheese, cilantro, and lime juice before serving.
