Crockpot Garlic Parmesan Chicken and Potatoes

A simple dump-and-go slow cooker meal with tender chicken, baby potatoes, and a creamy garlic-parmesan sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth

Instructions

  1. Place chicken and potatoes in the slow cooker.
  2. In a bowl, mix parmesan, cream, garlic, thyme, oregano, salt, and pepper.
  3. Pour the sauce over the chicken and potatoes. Add chicken broth.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Serve warm, garnished with extra parmesan if desired.

Notes

  • For a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp water and stir in during the last 30 minutes.
  • Try adding spinach or mushrooms for extra veggies.
