A slow cooker version with caramelized onions, rich broth, and cheesy baguette topping for cozy evenings.

Ingredients

  • 4 large yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 1 tsp sugar
  • 1 tsp salt
  • 4 cups beef broth
  • 2 cups chicken broth
  • 1/2 cup dry white wine
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1 bay leaf
  • 1 French baguette, sliced
  • 1 1/2 cups shredded Gruyere cheese

Instructions

  1. Melt butter in a skillet over medium heat. Add onions, sugar, and salt. Cook until caramelized, about 30 minutes.
  2. Transfer onions to slow cooker. Add beef broth, chicken broth, wine, Worcestershire sauce, thyme, and bay leaf.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Preheat oven broiler. Ladle soup into oven-safe bowls. Top with baguette slices and Gruyere cheese.
  5. Broil until cheese melts and bubbles, about 2-3 minutes.

Notes

  • Make ahead: Caramelize onions and store refrigerated for up to 2 days.
  • Freezer friendly: Store soup (without bread and cheese) for up to 3 months.
