Easy Crockpot French Dip Sandwiches with Tender Roast Beef

Make the best classic French Dip sandwiches with minimal effort using your slow cooker. This recipe delivers incredibly tender roast beef and a rich, homemade au jus perfect for dipping.

  • 3 lb beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1/2 cup water
  • 1 small yellow onion, sliced
  • 4 crusty French rolls or baguettes
  • 8 slices provolone cheese (optional)
  • 1 tablespoon butter, softened (for toasting)

Instructions

  1. Pat the beef roast dry with paper towels. Mix the salt, pepper, garlic powder, onion powder, thyme, and rosemary in a small bowl. Rub this seasoning mix evenly over the entire roast.
  2. Place the sliced onion in the bottom of your slow cooker. Place the seasoned roast on top of the onions.
  3. In a separate bowl, mix the beef broth, water, and Worcestershire sauce. Pour this liquid mixture around the roast in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 7 to 8 hours, or on HIGH for 3.5 to 4 hours, until the beef is fork-tender. This is a great set it and forget it slow cooker meal.
  5. Once cooked, carefully remove the roast from the slow cooker and place it on a cutting board. Cover it loosely with foil and let it rest for 15 minutes.
  6. While the beef rests, skim any excess fat from the surface of the liquid remaining in the slow cooker. This liquid is your homemade french dip au jus. Keep the au jus warm on the ‘Keep Warm’ setting or transfer it to a saucepan.
  7. Shred the roast beef using two forks, or thinly slice it against the grain if you prefer slices.
  8. Slice the French rolls lengthwise. Spread a thin layer of softened butter on the cut sides of the rolls. Place the rolls cut-side up on a baking sheet.
  9. Divide the shredded or sliced beef among the rolls. Top each sandwich with 2 slices of provolone cheese, if using.
  10. Broil the sandwiches for 1 to 2 minutes until the cheese is melted and the bread edges are lightly toasted. Watch carefully to prevent burning.
  11. To serve your best crockpot french dip, place the assembled sandwiches on plates. Pour the warm au jus into small bowls for dipping. Dip the sandwich generously into the beef dipping sauce before eating.
