  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 4 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: Shredded cheddar cheese, sour cream, chopped green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Add the browned ground beef, chopped onion, and minced garlic to your slow cooker.
  3. Add the rinsed and drained black beans and kidney beans, drained corn, diced tomatoes, Ro-Tel, cream of mushroom soup, and beef broth to the slow cooker.
  4. Stir in the chili powder, cumin, and oregano. Season with salt and pepper.
  5. Stir all ingredients together until well combined.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
