Crockpot Chicken Gnocchi Soup

A creamy, comforting Olive Garden-style soup made easy in the slow cooker with tender chicken and pillowy gnocchi.

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 16 oz potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add chicken broth, heavy cream, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Remove chicken and shred it with two forks. Return to the crockpot.
  5. Add gnocchi and spinach. Cook on high for 15-20 minutes until gnocchi is tender.
  6. Stir in Parmesan cheese before serving.

Notes

  • For a lighter version, substitute half-and-half for heavy cream.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently on the stove to prevent separation.
