  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) red enchilada sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1 avocado, diced (for topping)
  • 1/2 cup tortilla strips (for topping)

Instructions

  1. Place chicken, black beans, corn, enchilada sauce, diced tomatoes, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper in the crockpot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Remove chicken and shred it with two forks. Return the shredded chicken to the soup.
  4. Stir in the shredded cheddar cheese until melted.
  5. Serve hot, topped with cilantro, avocado, and tortilla strips.

  • For a spicier soup, add a diced jalapeño.
