Make unbelievably tender beef tips and a deeply savory gravy using your slow cooker. This easy crockpot beef tips recipe is perfect for weeknight dinners and requires minimal effort from you.

Ingredients

  • 2 pounds beef stew meat (or chuck roast cut into 1-inch pieces)
  • 1 packet (1 ounce) dry onion soup mix
  • 1 can (10.75 ounces) cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon vegetable oil (optional, for searing)
  • Salt and pepper to taste
  • 1/4 cup cold water
  • 2 tablespoons cornstarch
  • Egg noodles, mashed potatoes, or rice, for serving

Instructions

  1. If you choose to sear, lightly coat the beef tips with salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat. Sear the beef tips in batches until browned on all sides. Skip this step for a true ‘no peek beef tips recipe’.
  2. Place the browned (or unseared) beef tips into your slow cooker.
  3. Add the dry onion soup mix, cream of mushroom soup, beef broth, and Worcestershire sauce over the beef. Stir gently to combine everything.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours, until the beef is fall-apart tender. Do not lift the lid during the cooking time if you want the best results.
  5. About 30 minutes before serving, prepare the gravy thickener. In a small bowl, whisk together the cold water and cornstarch until smooth.
  6. Stir the cornstarch slurry into the slow cooker liquid. Stir well.
  7. Cover and cook on HIGH for another 15 to 20 minutes, or until the gravy has thickened to your liking.
  8. Taste the gravy and add salt and pepper if needed.
  9. Serve your tender crockpot beef tips and rich gravy hot over egg noodles, mashed potatoes, or rice.

Notes

  • For a creamy beef tips slow cooker version, add 1/2 cup of sour cream or heavy cream during the last 15 minutes of cooking (after thickening the gravy).
