A simple, set-and-forget slow cooker pot roast with tender chuck roast, potatoes, carrots, and rich gravy.

Ingredients

  • 3 lbs chuck roast
  • 1 lb baby potatoes
  • 3 large carrots, chopped
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch (optional, for thicker gravy)

Instructions

  1. Place onions, carrots, and potatoes in the slow cooker.
  2. Season the chuck roast with salt, pepper, and thyme. Place it on top of the vegetables.
  3. Mix beef broth and Worcestershire sauce, then pour over the roast.
  4. Cover and cook on low for 8 hours or high for 5 hours.
  5. If desired, mix cornstarch with a little water and stir into the juices to thicken the gravy.
  6. Shred the roast slightly with a fork before serving.

Notes

  • For extra flavor, sear the roast before adding it to the slow cooker.
  • Leftovers store well for meal planning.
