A simple dump-and-go slow-cooker soup with Tex-Mex flavors, shredded chicken, beans, corn, and crispy tortilla strips.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (optional)
  • Tortilla strips for topping

Instructions

  1. Place chicken breasts, black beans, corn, diced tomatoes, chicken broth, cumin, chili powder, garlic powder, and onion powder in the crock pot.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. Remove chicken and shred with two forks, then return to the pot.
  4. Season with salt and pepper to taste.
  5. Serve topped with shredded cheese, diced avocado, and tortilla strips.

Notes

  • For extra flavor, add a squeeze of lime juice before serving.
  • This soup is freezer-friendly—store in airtight containers for up to 3 months.
  • Use gluten-free tortilla strips if needed.
