Make dinner easy with this comforting, hearty Crock Pot Chicken and Stuffing. This set-it-and-forget-it slow cooker recipe yields tender chicken and flavorful stuffing with a rich gravy, perfect for busy weeknights.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 (16 ounce) box standard stuffing mix (do not prepare)
  • 1 cup water (for stuffing)
  • 1 tablespoon dried parsley
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon black pepper

Instructions

  1. Place the chicken pieces in the bottom of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, cream of celery soup, and chicken broth until smooth. Pour this mixture evenly over the chicken.
  3. Cook on low for 3 to 4 hours, or until the chicken is tender enough to shred easily.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir it into the soup mixture.
  5. In a small bowl, combine the dry stuffing mix, 1 cup of water, dried parsley, poultry seasoning, and black pepper. Stir just until combined; do not overmix.
  6. Gently spoon the stuffing mixture over the top of the chicken and sauce mixture in the slow cooker. Do not stir the stuffing into the liquid.
  7. Cover the slow cooker and cook on low for an additional 45 minutes to 1 hour, or until the stuffing is cooked through and fluffy. The stuffing should steam on top and absorb moisture without becoming completely submerged and soggy.
  8. Serve immediately. This is a fantastic one pot chicken and stuffing meal.

Notes

  • To prevent the stuffing from getting too soggy, ensure you layer it directly on top of the chicken mixture and avoid stirring it in before the final cooking stage.
  • For an even richer flavor, substitute one can of soup with a can of cream of mushroom soup.
  • If you prefer a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the liquid base before adding the stuffing layer.
  • You can add a bag of frozen green beans around the edges of the slow cooker for a complete meal.
