Make these satisfying, old-fashioned corn fritters for a quick snack or family-friendly side dish. They come out crispy on the edges and soft inside, packed with sweet corn and cheesy flavor.

  • 1 large egg, lightly beaten

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and pepper. This forms your dry base.
  2. Add the sweet corn kernels and shredded cheddar cheese to the dry ingredients. Toss gently to coat the corn and cheese with flour.
  3. In a separate small bowl, whisk together the milk, beaten egg, and cooled melted butter.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine for fluffy corn fritters.
  5. Heat about 1 inch of vegetable oil in a deep skillet or pot to 350 degrees Fahrenheit. You need enough oil to partially submerge the fritters.
  6. Carefully drop spoonfuls (about 2 tablespoons each) of batter into the hot oil, flattening them slightly with the back of the spoon. Work in batches to avoid crowding the pan.
  7. Fry for 2 to 3 minutes per side, until the corn fritters are golden brown and cooked through. This step creates that satisfying crunch.
  8. Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
