1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt

4 tablespoons olive oil, divided
1 tablespoon butter
8 ounces sliced fresh mushrooms
2 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
4 ounces cream cheese, cubed
4 ounces Monterey Jack cheese, shredded
1/2 cup fresh spinach, chopped
Instructions
Prepare the chicken: Pound the chicken breasts to an even 1/2-inch thickness. Set up a standard breading station: one shallow dish with flour, one with beaten eggs, and one with panko breadcrumbs mixed with Parmesan cheese, garlic powder, salt, and pepper.
Dredge each chicken breast first in flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Finally, press firmly into the panko mixture to coat completely.
Cook the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Cook the breaded chicken for 4 to 5 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove chicken and keep warm.
Make the creamy sauce: In the same skillet, melt the butter with the remaining 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté until they release their moisture and brown, about 5 minutes. Add minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and let it simmer, scraping up any browned bits from the bottom of the pan. Reduce heat to low.
Stir in the heavy cream and cream cheese. Whisk gently until the cream cheese melts and the sauce thickens slightly.
Stir in the Monterey Jack cheese until melted and smooth. Add the chopped spinach and cook until wilted, about 1 minute. Taste and adjust seasoning if needed.
Serve immediately: Place the crispy chicken breasts on plates. Spoon the creamy mushroom and spinach sauce generously over the top of each chicken breast.
Notes
For extra crispy chicken, you can bake the breaded chicken at 400°F for 15-20 minutes after a quick pan-sear.
If you do not have Monterey Jack, Swiss cheese works as a good substitute in the sauce.
