Instructions

  2. Cut each potato lengthwise into 8 equal wedges. Do not peel the potatoes.
  3. Place the cut wedges in a large bowl and cover them completely with cold water. Let them soak for at least 30 minutes. This removes excess starch, which helps them crisp up.
  4. Drain the potatoes completely and dry them thoroughly using paper towels or a clean kitchen cloth. This step is crucial for crispiness.
  5. In the same bowl, toss the dry potato wedges with olive oil until lightly coated.
  6. Sprinkle the cornstarch, salt, garlic powder, pepper, paprika, and oregano over the wedges. Toss well until every wedge is evenly coated with the seasoning and cornstarch mixture.
  7. Arrange the wedges on the prepared baking sheet in a single layer. Make sure they are not touching; give them space to bake, not steam.
  8. Bake for 20 minutes. Flip the wedges over.
  9. Continue baking for another 15 to 20 minutes, or until they are golden brown and crunchy.
