- 2 medium eggplants, sliced into 1/2-inch rounds
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 1 1/2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 2 tbsp olive oil
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix panko, Parmesan, oregano, garlic powder, salt, and pepper.
- Dip eggplant slices in beaten eggs, then coat with breadcrumb mixture.
- Place slices on the baking sheet, drizzle with olive oil, and bake for 20 minutes, flipping halfway.
- Spread a thin layer of marinara in a baking dish. Layer half the eggplant, more sauce, and half the mozzarella. Repeat.
- Bake for 15-20 minutes until bubbly and golden.

- For extra crispiness, bake eggplant slices on a wire rack.
- Use gluten-free panko for a gluten-free meal.
