A hearty Tex-Mex style soup with taco spices and a creamy base, perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef in a large pot.
  2. Add onion, bell pepper, and garlic. Cook until soft.
  3. Stir in taco seasoning.
  4. Add black beans, corn, diced tomatoes, and chicken broth. Simmer for 15 minutes.
  5. Pour in heavy cream and stir.
  6. Top with shredded cheddar cheese before serving.

Notes

  • For a slow cooker option, cook on low for 4-6 hours.
  • Top with sour cream, avocado, or tortilla strips.
