Creamy Garlic Parmesan Chicken

A quick and comforting chicken dinner with a rich white sauce, perfect for picky eaters and weeknight meals.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Optional: 1 cup spinach or sliced mushrooms

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds until fragrant.
  4. Pour in chicken stock and scrape up any browned bits.
  5. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 3-4 minutes until slightly thickened.
  6. Return chicken to the skillet and coat with sauce. Add spinach or mushrooms if using, and cook for another 2 minutes.
  7. Serve over pasta or rice.

Notes

  • Use freshly grated Parmesan for best melting.
  • Adjust cream and stock ratios for thicker or thinner sauce.
