- 2 boneless chicken breasts, diced
- 8 oz pasta (penne or fettuccine)
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 cups chicken broth
- 1 cup milk
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: 1 cup broccoli florets or spinach
- Heat olive oil and butter in a large skillet over medium heat.
- Add diced chicken, salt, and pepper. Cook until browned, about 5 minutes.
- Add minced garlic and sauté for 1 minute.
- Pour in chicken broth and milk, then stir in pasta. Bring to a boil.
- Reduce heat to low, cover, and simmer for 12-15 minutes until pasta is al dente.
- Stir in Parmesan cheese until smooth. Add broccoli or spinach if using.
- Serve immediately.
