A creamy one-pot pasta with tender chicken and garlic Parmesan sauce, ready in 30 minutes.

Ingredients

  • 2 boneless chicken breasts, diced
  • 8 oz pasta (penne or fettuccine)
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 cups chicken broth
  • 1 cup milk
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 cup broccoli florets or spinach

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add diced chicken, salt, and pepper. Cook until browned, about 5 minutes.
  3. Add minced garlic and sauté for 1 minute.
  4. Pour in chicken broth and milk, then stir in pasta. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 12-15 minutes until pasta is al dente.
  6. Stir in Parmesan cheese until smooth. Add broccoli or spinach if using.
  7. Serve immediately.

Notes

  • Use freshly grated Parmesan for a smoother sauce.
  • Add cheese off the heat to prevent graininess.
