- 2 boneless, skinless chicken breasts, diced
- 8 oz fettuccine or penne pasta
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup chopped parsley
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken, salt, and pepper. Cook until golden, about 6-7 minutes. Remove and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 30 seconds until fragrant.
- Pour in heavy cream, stirring constantly. Bring to a simmer.
- Add parmesan cheese, stirring until melted and smooth.
- Return chicken to the skillet. Add cooked pasta and toss to coat.
- Garnish with parsley and red pepper flakes if desired. Serve immediately.
Notes
- Substitute half-and-half for heavy cream for a lighter sauce.
- Add spinach or mushrooms for extra veggies.
- Use gluten-free pasta if needed.
