A creamy, hands-off potato soup that cooks in the slow cooker, topped with bacon, cheese, and green onions.

Ingredients

  • 6 cups peeled and diced potatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 green onions, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Add potatoes, onion, garlic, and chicken broth to the crockpot.
  2. Cook on low for 6-7 hours or high for 3-4 hours.
  3. Mash some potatoes for thickness.
  4. Stir in heavy cream, cheese, salt, and pepper.
  5. Cook for another 15 minutes.
  6. Top with bacon and green onions before serving.

Notes

  • Use russet potatoes for a creamier texture.
  • Add extra cheese for a richer flavor.
  • Store leftovers in the fridge for up to 3 days.
