- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 cup heavy cream
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Brown the ground beef in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in black beans, corn, diced tomatoes, and beef broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add heavy cream, chili powder, and cumin. Stir well.
- Season with salt and pepper. Simmer for 10 more minutes.
- Serve hot.
