  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 3 cups cooked, shredded chicken (rotisserie chicken works well)
  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 cup frozen corn
  • For serving: tortilla strips, shredded cheddar cheese, avocado, sour cream, fresh cilantro

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until soft, about 5 minutes.
  2. Add the minced garlic, cumin, chili powder, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth, diced tomatoes, and green chilies. Bring the mixture to a simmer.
  4. Stir in the shredded chicken and frozen corn. Continue to simmer for 5 minutes.
  5. Reduce the heat to low. Add the cubed cream cheese, stirring constantly until it melts completely into the broth, creating a velvety texture.
  6. Stir in the heavy cream until the soup is fully combined and creamy. Do not let the soup boil after adding the cream.
  7. Taste and adjust seasoning if needed.
  8. Ladle the hearty creamy soup into bowls. Top generously with crispy tortilla strips, shredded cheese, avocado, sour cream, and cilantro.
