Chicken and Rice Casserole

A simple dump-and-bake casserole with creamy sauce, perfect for weeknight dinners.

Ingredients

  • 2 cups uncooked white rice
  • 4 boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Spread rice evenly in a 9×13-inch baking dish.
  3. Place chicken breasts on top of rice.
  4. Mix soup, broth, garlic powder, onion powder, and black pepper in a bowl.
  5. Pour mixture over chicken and rice.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, sprinkle cheese on top, and bake for 15 more minutes.

Notes

  • Add frozen peas or broccoli for extra veggies.
  • Swap cream of chicken for cream of mushroom soup.
  • Use brown rice for a healthier option.
