  • 1 medium onion, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) cornbread mix (like Jiffy)
  • Ingredients required by cornbread mix (usually milk and eggs)

Instructions

  1. Preheat your oven to 375 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir in the black beans, pinto beans, corn, diced tomatoes and green chilies, chili powder, cumin, salt, and pepper into the skillet with the beef mixture. Cook for 5 minutes, stirring occasionally.
  4. Spread the meat and bean mixture evenly into the bottom of the prepared baking dish. Sprinkle the shredded cheddar cheese over the top of the meat layer.
  5. Prepare the cornbread mix according to the package directions. Pour the batter evenly over the cheese layer.
  6. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the casserole cool for 5 minutes before slicing and serving.
