  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup frozen or canned corn, drained
  • 1 cup cherry or grape tomatoes, halved
  • 1 red bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, diced (add just before serving)

Instructions

  1. Combine the rinsed black-eyed peas, black beans, corn, tomatoes, red bell pepper, red onion, and minced jalapeño (if using) in a large mixing bowl.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper to create the zesty lime dressing.
  3. Pour the dressing over the bean and vegetable mixture. Add the chopped cilantro.
  4. Gently toss all ingredients together until everything is evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This makes it a great make ahead dip.
  6. Just before serving, gently fold in the diced avocado.
