  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons red curry paste (adjust to your spice preference)
  • 1 (13.5 oz) can full-fat coconut milk
  • 4 cups vegetable or chicken broth
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon brown sugar
  • 1 pound frozen dumplings (potstickers or wontons)
  • 2 cups chopped vegetables (like spinach, bok choy, or sliced mushrooms)
  • Juice of 1/2 lime
  • Fresh cilantro, chopped, for garnish
  • Red pepper flakes, for serving (optional)

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant.
  3. Stir in the red curry paste and cook for 1 minute, allowing the spices to bloom.
  4. Pour in the coconut milk and broth. Stir well to combine with the curry paste. Add the soy sauce and brown sugar. Bring the mixture to a gentle simmer.
  5. Add the frozen dumplings to the simmering broth. Cook according to package directions, usually about 5-8 minutes, until the dumplings float and are cooked through.
  6. Stir in your chosen vegetables. If using leafy greens like spinach or bok choy, cook until just wilted, about 2-3 minutes.
  7. Remove the pot from the heat. Stir in the fresh lime juice.
  8. Ladle the soup into bowls, making sure each serving gets plenty of dumplings and broth. Garnish generously with fresh cilantro and add red pepper flakes if you want extra heat. Serve this cozy comfort food immediately.
